Sausage and Cheesy Egg

with Chicken Chorizo Sausage - Smoked Chicken Sausage with Chorizo Spices

Ingredients

½ Ibs Chicken Chorizo Sausage

​2 Ibs. squash

4 tbsp. olive oil

Salt and pepper

1 red onion

1 garlic clove

10 eggs

1 cup milk

1¼ cups grated cheese

Parsley, basil, and/or cilantro (for serving)

Directions

​Preheat oven to 475°

Toss squash with 2 Tbsp. olive oil, generously season with salt and pepper

Roast until softened (about 10 minutes)

Toss sausage, onion, and garlic with remaining 2 Tbsp. oil in a large bowl; season with salt and pepper

Scrape into dish with squash and toss to combine

Return to oven and roast until squash is tender and browned and other vegetables are softened ( about 10–15 minutes)

Whisk eggs and milk in same bowl and stir in 1 cup cheese; season with salt and pepper

Reduce oven temperature to 350°

Carefully pour egg mixture into baking dish

Top with remaining ¼ cup cheese

Bake until eggs are set but still slightly wobbly in the center and edges are puffed and brown (about 10–15 minutes)

Serve topped with parsley and herbs
