Duck Pâté and Mozzarella Salad with Fresh Fruit Salsa

with Pâté de Canard à l’Orange - Pork & Duck Pâté with Orange Peel

2, 1/4'' slices Pâté de Canard à l’Orange

​2, 1/4'' slices of Canard á l'Orange (duck pâté with orange)

2 fresh mozzarella balls

Ingredients to combine together for Fruit Salsa:

1/2 c. mandarin orange sections

1/2 c. fresh pineapple, diced

1/2 c. fresh peaches, diced

2-3 stalks celery, finely diced

2 medium red bell peppers, seeded and diced

1-2 red serrano peppers, seeded and minced

4 scallions, chopped finely

2 Tbsp. fresh cilantro, chopped finely

1/3 c. fresh lime juice

2 tsp. fresh ground pepper

Salt, to taste

1/4 c. pistachios, chopped


​Combine all ingredients for salsa together in large mixing bowl. Slice each piece of pâté into quarters. Place two slices of pâté and two slices of mozzarella on each plate, alternating the two. Spoon salsa around the sections. Sprinkle chopped pistachios over the fruit salsa.
