1/2 lb. Chicken Chorizo Sausage
1 lb. winter squash or butternut squash, stemmed, seeded & cut into wedges or slices
4 Tbsp. extra virgin olive oil
Salt and pepper
1/2 large onion, sliced
1 Fresno chili; stemmed, sliced
1 garlic clove, grated
10 large eggs
1 cup milk
1 1/4 cup grated cheese
Chopped scallion greens, parsley or basil (for serving)
Preheat the oven to 475°F. Place the squash and 2 tbsp. of oil in a baking dish. Season with salt and pepper. Roast for 10 minutes - until softened.
Mix the sausage, onion, chili, and garlic with 2 tbsp. of oil in a bowl; season with salt and pepper. Add the squash and combine. Put back in the baking dish and return to oven for 10-15 minutes.
Meanwhile, whisk the eggs, milk and 1 cup of cheese; season with salt and pepper.
Reduce oven temperature to 350°F. Pour the egg mixture into the baking dish, add 1/4 cup of cheese on top. Bake for another 10-15 - until the edges are brown.
Let the dish cool down for 10 minutes before serving, and add scallions, parsley or basil on top as garnish.
